Does it do this when the engine is hot or cold or both? Have you had the fuel relay out and tested it?

Had a similar problem that turned out to be a relay on its way out, altough I thought it was the pump cos when you turn the ignition key, you can usually hear the pump whine a bit. When the relay was dodgy it didn't always do it. It seemed to be worse when its warm or been run for a bit. When it cooled down it started and ran fine. Try pulling the horn relay out and swapping it for the fuel pump one for a quick check.
Also thinking that maybe the pump has picked up a load of crap from the bottom of your tank. Is the filter fairly old? If you disconnect the fuel line from the filter and turn it over, does fuel come out of the hose fairly well or does it splutter about? If its spluttering, try taking the filter apart to see if there is any corrosion clogging it. I fitted a high flow inline filter to mine and its kept it alot cleaner, plus you can see if its getting blocked. Not had any performance issues and done it on all my cars.
Hope you get it fixed.
